I'm splitting my CSA this season, and originally, the plan was to figure out a way to divide it each week. That was abandoned in week 3. Just wasn't feasible. So, we're now splitting it by each of us taking a whole share every other week. That's a lot of produce for me to go through. But … but, I think I finally did it (save some herbs and a handful of green beans).
I used the remainder of my CSA on dinner tonight by mashing the few last potatoes and roasting the beans.
So, an accounting for this share: I made gazpacho with the six big tomatoes, onions, and a few cucumbers I got. I made the mu-shu dish with the mushrooms, onions, bok choy, and green beans and made the Asian cucumber side salad. I made a spicy tomato sauce with the cherry tomatoes, and then the dinner tonight. There's still a very cute head of garlic, but that will keep.
Whew! That took me roughly 10 days. I pick up my next share on Wednesday.
